A young white dragon's CR calculates to 7 or 8, but its CR is 6 in the mm. If you look through the monster manual, plenty of the monsters have CR that doesn't actually follow the formula that they give you. A creature with 7 health, 19 AC and 5 damage with a +8 to hit calculates to a CR 1 monster according to their formula. But wait, they have the nimble escape trait, which says that we should increase the monster's effective AC and attack bonus by 4. Goblins do 5 damage with a +4 to hit, which is an offensive CR of 1/4th as well. Goblins have 7 health and 15 AC, which gives them a defensive CR of 1/4. the monster manual perfectly balanced the creatures in there according to their guide in the DMG for creating a monster, without fail.
